Singh Meadows Offers Locally-Sourced Fare in a Gorgeous Setting
If you have lived in the Valley for a while, you’ve probably heard about the legendary Singh Farms in Scottsdale. Owners Ken and Lee Singh closed their weekly farmer’s market and brought it to Tempe, where the 72-acre Rio Salado Golf Course operated for 30 years. Now, the Singh’s are slowly transforming the property into an organic farm, community market and one-stop-happening.
Singh Meadows opened this past January, combining a wonderful Farmer’s Market with a bakery, gourmet Café, Juice Bar, Coffee Bar and picnic area. Over the past three years, Singh has diligently been prepping the soil by flushing out the chemicals used by the golf course and adding nutrients in order to grow organic vegetables.
Singh, a community leader and an entrepreneur, is now back to taking care of the earth, a passion he loves to share with everyone as a leading soil expert who produces his own compost.
A Weekend Happening
Joining Singh Meadows to run the Café are the talented Chefs Jay Bogsinske and Frank Belosic. Chef Bogsinske has worked at the St. Francis in Phoenix, The Phoenician, Sheraton Downtown, District American Kitchen, LGO and Chelsea’s Kitchen. Chef Belosic’s 25 years of experience includes being Executive Chef at The Phoenician, and later at the Sheraton Downtown, plus owning a restaurant in California.
“We’re back to doing what we love,” explains Chef Belosic about working with Bogsinske. “That’s touching every piece of food that goes through the kitchen”.
Dan Medlen runs the bakery, offering an assortment of breads and pastries, including pretzel rolls. The Singh’s son, Kehar, is in charge of the Juice Bar, creating healthy, fresh-squeezed juices with pineapple, ginger, apple, kale and tropical beet, to name a few of the ingredients. There’s also organic coffee for the coffee lovers.
The made-to-order breakfasts, lunches and snacks are incredible, and definitely worth waiting in line to order. The menu selections change weekly, depending on what is being harvested. However, it’s guaranteed that each week they will tantalize your taste buds with items like farmhouse quiche; homemade muesli; smoked salmon on toast; golden beet arugula salad with buffalo mozzarella; caramelized onion and arugula pizza; grilled cheese sandwiches; golden beet soup and a farmer’s veggie purse, all prepared by gourmet chefs while you watch.
Singh’s vast experience has taken him full circle, and with opening Singh Meadows, he is able to share his wonderful, organic vegetables with the community while educating them about the importance of good earth.
“I’ve cleaned up the pond, added fish, a walking path, fire pits and more so families can come and enjoy good food and nature,” says Singh. “For a couple of hours, they can relax and forget they’re in the middle of a busy city.”
