Chocolate Chip Santa Cookies

Ingredients:

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 cup (2 sticks) butter, softened

3/4 cup granulated sugar

3/4 cup packed brown sugar

1 teaspoon vanilla extract

2 large eggs

3/4 cup chocolate chips

3/4 cup white chocolate chips

3/4 cup red and green M&M’s

Directions:

Preheat oven to 375° F. Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chocolate chips, white chocolate chips and M&M’s. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 4 1/2 dozen cookies

SunButter Kiss Cookies

Ingredients:

1/2 cup butter, softened

1/2 cup SunButter® (I used Natural)

1/2 cup sugar

1/2 cup packed brown sugar

1 egg

1 1/2 cups all-purpose flour

3/4 teaspoon baking soda

1/2 teaspoon baking powder

Additional sugar for rolling

36 Hershey’s Kisses® (plain chocolate variety), unwrapped

Directions:

Heat oven to 375°F. In a large bowl, mix cream butter and SunButter together until smooth. Add sugars and cream for 2 to 3 minutes. Add egg, beating until combined. Stir in flour, baking soda and baking powder until dough forms. Shape dough into 1-inch balls and roll in additional sugar.

On ungreased cookie sheets, place balls about 2 inches apart. Bake 8 to 10 minutes, or until edges are light golden brown. Immediately press 1 Kiss candy in the center of each cookie. Remove from cookie sheets to cooling rack.

Dark Chocolate Chip and Butterscotch Cookies

Ingredients:

1 cup butter, softened

3/4 cup sugar

3/4 cup brown sugar

1 teaspoon vanilla

2 eggs

2 cups flour

1 teaspoon salt

1 teaspoon baking soda

1 cup dark chocolate chips

1 cup butterscotch chips

Directions:

Preheat oven to 375 degrees F. Cream together butter and sugars until fluffy, about 4 or 5 minutes, then add vanilla. Add eggs one at a time then add dry ingredients Bake for 10 minutes.

Dark Chocolate & Pistachio Chocolate Chip Cookies

Ingredients:

1 stick unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon Nielsen-Massey Madagascar Bourbon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup dark chocolate chips
1 cup shelled pistachios, coarsely chopped

Directions:

Place rack in the upper third of the oven and preheat oven to 300 degrees F. Line baking sheets with parchment paper and set aside.

In the bowl of an electric mixer fitted with a paddle attachment, beat butter and sugars together until pale and fluffy, about 4 minutes. Add the egg and beat for about 1 minute more. Add vanilla extract and beat to incorporate.

In a medium bowl, whisk together flour, baking soda and salt. Add the flour mixture to the butter mixture. Mix on low speed until just incorporated. Finally, stir in the chocolate chips and nuts.

Scoop cookie dough by the tablespoonful onto prepared baking sheets. Leave about 2 inches of room between each cookie.

Bake cookies for 18 minutes, or until just golden brown. Remove from oven and allow to cool on  pan for 5 minutes before removing to a wire rack to cool completely.

Cinnamon Stars

Ingredients:

2 egg whites
10.5 oz ground almonds or almond meal
1 3/4 cups powdered sugar
1 teaspoon vanilla sugar
1 teaspoon cinnamon

Directions:

Separate the egg whites from the yolk (save yolks for another recipe).  Beat the whites until hard. Slowly add the sifted powdered sugar and continue to beat until you have a nice creamy consistency.

Put 60g (about 5 tablespoons) of the mixture in a separate bowl (this will be your glaze).

Now add the vanilla sugar, cinnamon and almond meal. Dust your workspace with powdered sugar and roll out the dough about a third to half-inch thick. Cut out the stars and place them on a nonstick baking sheet then glaze. Bake at 250F for 25 minutes.
